What to do with nut milk pulp…Cookies!

Almond-Coconut-CookiesWe all love to make our own nut milks. How wonderfully satisfying it is to sip down wholesome homemade goodness… Whether it be Almond Milk, Cashew Milk, Hazelnut Milk, Brazil Nut Milk, or whatever Nut Milk, the most common question I get is – what can I do with the pulp?

While many folks are content with adding the pulp to their compost, I always cheer “don’t do it”. Finding and paying the price for raw organic nuts can be extremely challenging so when you have such fortune you should take advantage of the blessing to the fullest! If you know you won’t have the time to make use of the pulp soon, feel free to freeze it for when you do have the time.


I typically suggest using the pulp to make bread or crackers but lately we’ve been on a sweet-tooth kick and have been putting that pulp to sweet use by making COOKIES!


Iced-Cookies

These Iced Cookie beauties were made with the pulp of some Almond Sesame Milk and coconut. Made in the traditional thumbprint cookie style with a raw Orange Vanilla Cream. Yum!

    Nut mylk pulp is fun to play with!
    We use ours for raw brownies, cookies, cakes, fudge, crackers and breads.
    Most recently we made a raw crumble topping for fruit cobblers/crumbles.

    The orange vanilla cream sounds great! Is it coconut cream based?

    Yumm… crumble sounds like a great way to use that pulp!

    The orange vanilla cream is not coconut based. Since the cookies had so much coconut I wanted something to contrast it some. It was basically cashews, orange juice, and orange zest with a little agave, salt and water.
