21-Day Green breakfast Challenge

Today, February 1st starts our first 21-Day Green Breakfast Challenge.

The goal of this challenge is to have greens in every breakfast meal for the next 21 days.

Day 1: Family Green Juice

Our Day 1 Breakfast:
    Today was a family Juice morning!

 We juiced:
    9 carrots
    1 apple
    1 lemon
    1 large beet
    2 celery stalks
    1 cucumber
    1 chunk of ginger (about 1 TBS)
    1 fennel stalk
    2 large collard leaves
    1 large red chard leaf
    4 beet green leaves
    2 cups spinach

    This makes 4 super yummy cups of juice!

Here are some of the other participant Day 1 breakfasts:

I made a chocolate milkshake.  No kidding.  One banana, two tbsp of cocoa powder, a cup of baby spinach, about a half cup of frozen blueberries, a scoop of protein powder and a cup of liquid (I used milk, cause that's what I had, and hey, it's calcium!).  Whirr in blender and enjoy.  Makes enough for two servings.

I took almond milk and added 2 teaspoons of Dr. Ben Kim's Greens, a scoop of Berry Hemp Protein Pwd, a cup of frozen blueberries, some frozen mango and strawberry, and a little honey and coconut oil.  Pretty good!  I also had a homemade almond-meal muffin.

    My green smoothie this morning is:
    1 banana, peeled
    1 orange, peeled
    1/4 beet, peeled
    three beet green leaves with stems (these were big beets!)
    a wedge of purple cabbage (or is it called red cabbage?)
    handful of mixed salad greens (the organic Costco baby greens)
    1/2 an avocado
    handful of frozen mango
    handful of frozen strawberries
    some filtered water (I don't measure it)
    3-4 drops of Wild Orange essential oil
    Made about 24 oz.

Day 2: PineApple Green Smoothie

Day 2: Today was back to basics with a green smoothie:

1 TBS Chia seeds
1 apple
2 cups fresh pineapple
2 large Chard leaves
1 1/2 cup baby spinach
water to blend

Blended smooth in our Vitamix to make about 5 cups

This morning commanded a hearty Green Juice for breakfast (this one is extremely low in sugar content):

1 apple
1 lemon (peeled)
1 inch ginger
2 celery stalks
1 stalk fennel
1/2 cucumber
1 giant Collard leaf
3 cups Spinach
4 Beet Greens leaves
4 huge Romaine leaves
1 large Chard leaf

Day 5: Apple orChard Cleanse smoothie

Apple orChard Cleanse smoothie:

1 TBS chia seed
1/4 goji berries
2 apples (cored)
4 big Chard leaves, stalk removed (for later juicing)
water

Blend it up. Note that this recipe is a little more "pulpy" in nature than most because of the chia seed and so much apple.

1 bunch Italian parsley
1 bunch cilantro (I take off all the stems of both of these, but you don't have to)
1 cup hemp seed
8 green onions finely chopped
juice of 1 lemon
1/8 cup olive oil
about 1/2 cup cherry tomatoes
1/2 cucumber peeled and diced
1/2 tsp sea salt

Raw Avacado Greens Soup


1/3 cucumber
1 large fennel stalk
3 baby bok choy
2 lacing (dinosaur) kale leaves
1/4 cup sprouts (radish or clover)
1/2 avocado

After blending smooth put in a bowl, add chopped cherry tomatoes and enjoy

Blueberry Bliss

   1/4 cup goji berries
   2 tsp chia seeds
     (soak these 2 ingredients in water in the canister while you prepare the rest)
   4 lacinto kale leaves (dinosaur kale)
   1/2 cup blueberries
   1 small banana
   2 romaine leaves
   water

Blend and enjoy! makes ~20 ounces

Day 11: "My Special Cherry Smoothie"

Our 6 year old son, Jonathan declared that he was going to make the green smoothie this morning for us. He claimed: "This is my very special cherry smoothie. It's kinda like mommy's but different. You are going to love it." And boy howdy did we LOVE IT. I think you will too.

(Jonathan put everything in the container as he saw fit - I jotted down approximate amounts as added them.)

1/2 c Water in the container
1 TBS "cha-cha-cha-chia" (chia seeds)
1/2 cup frozen cherries
1 frozen banana
1/2 cup coconut milk
"2 handfuls of spinach for ya" (2 cups)

Blended up with the tamper and served to make 2 fantastic 12 oz servings!
