Raw Food Made Easy
Author Jennifer Cornbleet.

If I were to recommend only one book to a newbie, or someone with limited time, or someone with limited appliances, or someone with limited finances (sounds like most everyone!), THIS would be the book.

For about a year, this was the only book I ever used. Every single recipe uses only a blender or a food processor or both. The recipes are so simple. She gives a shopping list in the beginning of the book, stating that if you have these items in your fridge, then you'll be able to make everything in the book. She also makes soaking and sprouting very clear and easy to understand. For instance, if you've soaked nuts or seeds, then you know that the measurement changes considerably after soaking. So, is the recipe calling for 1 cup of almonds before or after soaking? All of her recipes tell you that. I've never seen another book do that. Each recipe is simple enough that you can make it quickly and even be spontaneous. That's another thing that can be challenging with raw food prep, often the amount of preparation is astounding. I sometimes have to plan on Tuesday what I'm going to be hungry for on Friday because it takes that long to soak and dehydrate.
Anyway, buy this book.
