If you want raw nut butters - adding oil is typically a necessary "evil". Most raw nuts just don't have enough oil to make creamy butter by themselves. Roasting most nuts results in them releasing more oil so that creamy butters can be made with little to no oil.
We actually have changed to making our nut butters with our juicer using the crush screen. This has resulted in the smoothest - no oil added butters for us.
I personally haven't made peanut butter but tips in general include:
- keep working the tamper, the less oil means the more time and more tamping necessary
- do about 2-3 cups of nuts at a time
- add oil slowly
