Iced Cookies

Take the pulp from making a pitcher of nut mylk; about 2 cups of packed pulp
Place in food processor with about scant 1/2 cup agave nectar, 3/4 cup shredded coconut and a dash of salt. Process until mixed. Pour into bowl and mix more thoroughly with your hands. Form round cookies with about 2 tsp of "dough". They should be about 1/4 inch thick or a little more. You can experiment with this. Place on Teflex sheets on your dehydrator trays. Ice the cookies with the following:

Orange Vanilla Sweet Cream
cashews
zest of 1 orange
juice of 1 orange
dash salt
agave
water
Blend all until creamy. Adjust amounts until you get the taste and consistency you want. Sorry, I'll measure next time I make this. My good friend, Michelle Joy Schumann, made this for me and I didn't take note of the measurements.

I made 1/2 the batch iced and 1/2 the batch plain.
